Sometimes nature has plans of its own.
One unusually wet flowering season changed the course of this honey. Heavy rainfall reduced the Mānuka nectar flow, encouraging our bees to forage the alpine white clover flowering throughout the meadows surrounding Mt Lyford. The result was an unexpected partnership that produced a honey unlike any other in our collection.
Although each season tells a different story, Wild Clover & Mānuka Honey remains predominantly Mānuka. The first harvest produced an unusually high proportion of white clover nectar, creating a beautifully soft, flowing honey. The following season returned to a stronger Mānuka character, bringing richer herbal notes, natural crystallisation and a higher MGO testing at 169+ MGO.
The first taste is unexpectedly delicate, opening with coconut and ripe pear before a whisper of toffee gives way to the unmistakable botanical character of wild Mānuka. As the flavour develops, the herbal finish lingers gently, revealing the honey's evolving personality and reminding you that no two seasons are ever quite the same.
Some harvests become favourites. Others become memories. This one became both.
